Processing Rates


Attention Custom Butchering Customers: Due to the COVID-19 pandemic, we have been overloaded with scheduling. With the county fair-wave rapidly approaching, we are forced with making some difficult calls with our custom butchering schedule.
If you know you have an appointment but do not need it (or have no livestock to bring us) DO NOT GIVE THESE DATES TO ANYONE! We NEED these dates for our availability! If you “give” your appointment to anyone, you will risk losing your 2021 date. If you cannot fill your scheduled date, please call us ASAP and let us know.
If you are on a “waiting list”, we are asking that you call other processors to make appointments, as we are almost certain we cannot squeeze you in.


BEEF:
Dressing Charge: $80/whole
Cut, Wrap, & Freeze:
Whole/Half Beef: 60¢/lb (dressed/hanging wt)
Quarter Beef: 65¢/lb (dressed/hanging wt);

Deboning all Steaks: 63¢/lb (dressed/hanging wt)
Hamburg Patties:  40¢/lb

Buying from Don’s:
Not available until June 2020 due to the COVID-19 pandemic.
$3.09/lb (dressed wt.; includes kill charge, cut, wrap, freeze, patties, and buying carcass)

HOGS:
Kill Charge: $40/whole
Cut, Wrap, & Freeze: 60¢/lb (dressed wt.);

SAUSAGE:
50¢/lb- Regular Casing
60¢/lb- Small Link Coils
75¢/lb- Regular Linking
85¢/lb- Small Linking
50¢/lb- Patties (must have 20# or more meat)
$1.25/lb- Smoked Sausage

SMOKING/CURING:
$15 per Ham
$17 per Peppered Ham
$10 per Bacon/ Hillbilly Bacon
$12 per Peppered Bacon
$11 per Loin, Canadian Bacon, Picnic Shoulder and hillbilly bacon

$16.00 Lard / whole hog (4 lb tub)

Buying from Don’s:

GOATS: $80 quoted price (see below for details)

Cut, Wrap, & Freeze: $40 minimum up to 75lbs (dressed wt.); 60¢/lb over 75lbs (dressed wt.)

TURKEYS/CHICKENS:
Smoked: $14 per Turkey
Smoked: $10 per Chicken

TRAIL BOLOGNA & SUMMER SAUSAGE: (10 LB MINIMUM)
$1.50/lb- Trail  Rings, 3″ Logs, or 5″ Logs

HOT CHEESE TRAIL BOLOGNA: (10 LB MINIMUM)

SNACK STIX: (10 LB MINIMUM)

      Unfortunately, we do not process poultry. We only provide services to smoke poultry for customers who have already had their birds processed elsewhere. Sorry for the inconvenience.
